Crunchy Kale Slaw with Sesame Ginger Vinaigrette

Salads have always been my thing.

I am always that one that brings a salad to a BBQ, and I try to have salad with at least one of my meals throughout the day. My love of salad has also started to spread to my kids - my daughter is a huge fan of kale salads - and I am SO here for it. My kids love eating my salads (out of my bowl instead of their own….naturally), but I am always happy to share it with them!

It is so exciting for me to see the positive impact that focusing on your own health can have on the people close to you.

Making sure you are eating some raw veggies in your diet is very beneficial for both your gut health, and for nutrient absorption. Many beneficial nutrients are lost during the cooking process, so ensuring you are including some raw vegetables into your diet will support your health greatly.

Plus….who doesn’t love a good crunchy, flavourful salad? I know I do!

This salad is a great option to add to your weekly meal prep - you can make it ahead of time and store it in the fridge (without dressing added). It is easy to portion out and add your protein of choice for a quick and easy lunch! I am ALL about those quick and easy lunches!

I have also tried pairing this salad with many different protein options, and have not been disappointed yet! Shredded chicken, seared tuna, edamame, salmon, and steak, all are wonderful accompaniments to balance this salad for maximum blood sugar support.

CRUNCHY KALE SLAW WITH SESAME GINGER VINAIGRETTE

Ingredients

  • 2 cups kale, shredded
  • 2 cups green cabbage, shredded
  • 2 cups purple cabbage, shredded
  • 2 carrots, grated
  • 2 green onions, sliced
  • 1/2 red pepper, julienned
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp black sesame seeds
  • optional: 1/4 cup cilantro, minced
SESAME GINGER DRESSING
  • 1 inch ginger, grated
  • 2 garlic cloves, crushed
  • 2/3 cup apple cider vinegar
  • 1/4 cup tamari
  • 1/4 cup toasted sesame oil
  • 1/4 cup hemp oil (or cold pressed olive oil)

Instructions

  1. Mix all salad ingredients in a large bowl.
  2. Drizzle with some of the dressing, and toss! Extra dressing can be stored in the fridge for about a week.
