Coconut Snow Balls

When I was a kid, I LOVED bounty bars. You know the ones…the sweet coconut bars drenched in sweet milk chocolate? Honestly, coconut and chocolate together has to be one of my all time favourite flavour combos. Those good ol’ Bounty Bars pack a whopping 14g of refined sugar per piece though….which is a lot for your body to handle all at once!

I wanted to try and recreate that delicious coconut & chocolate combination I loved from my childhood, but adapt it into a version that would also help support my blood sugar. These Coconut Snow Balls seriously hit the nail on the head! They are subtly sweet, have a rich coconut flavour and texture, with a nice finish of dark chocolate. Not only that, they contain a good amount of healthy fats and fiber to help support your blood sugar!

If you don’t want to take my word at how delicious these are, you can ask my husband….I can’t seem to keep him away from them!

The balls are a bit crumbly when you roll them, but once in the fridge they harden up nicely, giving them a delicious texture! These treats are best served right out of the fridge.

COCONUT SNOW BALLS

Ingredients

  • 2 cups Unsweetened Coconut, Dessicated
  • 3/4 cup Coconut Butter
  • 1 tsp Pure Vanilla Extract
  • 1 tbsp Maple Syrup
  • Pinch Sea Salt
  • 4 oz 70% Dark Chocolate

Instructions

  1. Line a baking sheet with parchment paper, set aside.
  2. In a medium sized bowl, mixer, or food processor, combine coconut, coconut butter, vanilla, maple syrup and sea salt. Mix to combine.
  3. Shape into 24 balls and place onto prepared baking sheet.
  4. Place baking sheet in the fridge to set for 1 hour.
  5. After about 45 minutes has passed, begin melting the chocolate. place a glass bowl over a pot with about an inch or two of water in it. Place chocolate pieces inside and heat chocolate on low until melted. Be sure to stir the chocolate frequently to keep it from burning.
  6. Remove balls from the fridge and begin dipping the bottom of them into the chocolate, place back on baking sheet.
  7. Once all the balls have been dipped, begin drizzling remaining chocolate over top of each chocolate ball.
  8. Place back in the fridge to allow the chocolate to set. About 1 hour.

Notes

Keep balls in fridge or freezer until ready to enjoy.
