Shredded Broccoli and Apple Salad
Looking for a new winter salad? Look no further!
Summertime is really when salads shine in many diets, due to the seasonal availability of a lot of vegetables…but that shouldn’t stop you from enjoying a delicious and bright salad in the winter time!
I was recently talking with a client, and she was struggling with just this. She missed having salads, but was having such a hard time finding good produce for it.
Well…that just made me want to try and create one that would benefit not only her, but anyone else who is missing salads during this cold season!
While brainstorming what I would put in this salad, I really thought about what vegetables really shine during this season. Enter in broccoli and kale! These two veggies are available year round, but they are more fall/winter vegetables than summer. Broccoli and kale are great liver supporting vegetables, but not everyone enjoys a slightly bitter flavour. I helped to minimize the bitterness two ways:
I massaged my kale with a bit of oil before adding the rest of the ingredients to the bowl. This helps to soften the kale and can take out a little bitterness as well I find.
I added in some delicious apple!
If you have been following me on Instagram for a while, you know how much I LOVE the mighty apple. It is something that is included in every one of my clients’ plans, and something that must be eaten daily. Why, you ask? Well…
Apples are high in fiber, specifically pectin - a soluble type of fiber that can help with issues of constipation, as well as can support the lowering of LDL cholesterol.
They are rich in Quercetin - a naturally occurring plant chemical that has antioxidant and anti-inflammatory effects
They are also rich in vitamin C, which I know needs no explanation…
They have a low glycemic load, meaning they wont spike your blood sugar as much after eating.
Due to their high fiber and low glycemic load, they are a fantastic fruit to add into your diet if you have a weight loss goal!
Finally, the salad needed a little extra OOMPH to make it truly irresistible which is where the red onion and feta come in! I mean, who doesn’t love feta on their salad?
This might be my new favourite salad, and I truly hope you enjoy this as much as I do!

SHREDDED BROCCOLI & APPLE SALAD
Ingredients
- 1 medium sized broccoli crown, shredded
- 1 bunch kale, shredded
- 1 apple, diced small.
- 1/4 cup red onion, diced small
- 1/2 cup feta, crumbled
- 1/2 lemon
- 1/4 cup oil (cold pressed extra virgin olive or cold pressed hemp seed recommended)
- 1/2 cup apple cider vinegar
- 1-2 garlic cloves
- 1 tsp dijon mustard
- sea salt & pepper to taste
Instructions
- Dice apple and place in bowl. Cover with the lemon juice from 1/2 a lemon and mix. This will help prevent browning.
- Meanwhile, make salad dressing. Combine all dressing ingredients into a bowl and whisk to combine.
- Place shredded kale into the bowl and drizzle a little oil over top. Using your hands, massage the kale until it becomes bright green in colour. Add remaining salad ingredients and top with half of the salad dressing. Mix, and add extra dressing if needed.
Notes
I find shredding the broccoli in a food processor is the easiest method!
